  • 350g (12 1/3 ounces) all-purpose flour plus extra for dusting

  • 100g (3 1/2 ounces) mini frankfurters
  • 800g (1 3/4 pounds) potatoes

  • 80g (2.8 ounces) boiled ham in slices
  • 125g (4.4 pounces) mozzarella cheese
  • 1 1/2 tablespoon extra virgin olive oil
  • Some almonds, finely sliced

Besides this savory tart is very tasty. Its filling is special. It reminds Neapolitan gatò that is a potato pie enriched with boiled ham and mozzarella cheese. The dough decorations are filled with grated mozzarella. Frankfurters are placed on the main doors, balconies and windows. The sliced almonds look like the nails ... don't they?

Here's the recipe!

Prepare the pizza dough. If you have enough time you can prepare the pizza dough following our directions (pizza dough recipe) but remember to use the amount of flour suggested in this recipe. Besides use 3 tablespoons extra virgin olive oil. You'll use the fourth tablespoon to grease the baking pan. Let it leaven in a warm place until it doubles its volume.
If you haven't enough time buy ready-to-cook pizza dough (more than 500 g - 1lb and 1 1/2oz).

Boil and prepare the potatoes. Steam the potatoes and then put them through a vegetable mill when still hot. Add a knob of butter, a glass of milk, a pinch of nutmeg, two tablespoons of dried chives. Season to taste with salt, stir and put apart.

Prepare the spinach. Soak the dried tomatoes in cold water for about 15 to 20 minutes. Pat dry with absorbent kitchen paper and cut into little pieces.
Put two tablespoons olive oil in a non- stick frying pan. Add the onion, spinach and dried tomatoes. Begin cooking on very low heat, half-covered, stirring now and then and pouring a drop of wine if the spinach tend to stick to the bottom of the pan before the end of cooking. Let all the cooking juice reduce very well.
Once switched off the gas season to taste with salt, add 3 to 4 mini frankfurters and stir accurately. Let the spinach cool and then reduce to puree in a food processor. You must obtain a fairly soft cream.

Prepare and cook the savory tart. When the dough is doubled divide it into two different portions, 2/3 and 1/3.
Grease a rectangular baking pan (26-by-33 cm / 10-by-13 inch) with the remaining tablespoon olive oil. Sprinkle the baking pan with flour.
Grate the mozzarella cheese.
Preheat oven to 200 °C (400°F).
Roll out the bigger pizza dough into a rectangular shape on a lightly floured work surface and then line the baking pan with it.
Halve the potato mixture and spoon the first part on the bottom of the savory tart. Level the surface. Arrange the ham slices on the surface and sprinkle with grated mozzarella cheese (about 2/3). Put apart the remaining mozzarella.
Cover with the remaining potato mixture and level the surface.
Now cut the remaining pizza dough into pieces. Roll out every piece into a large and long strip on a lightly floured surface. Sprinkle the remaining mozzarella cheese on it and then overlap its edge. you must obtain a cylinder. With these cylinders make the hand and the two houses. Look at the photo for more details.
Spread the spinach cream inside the two houses. Make the decorations with mini frankfurters. But don't use the almonds now. They would color too much.
Bake for about 20 to 25 minutes or until the surface is golden.
Some minutes before the end of cooking apply the almond slices on the end of every frankfurter. Bake for other 2 or 3 minutes.
Your savory tart is ready!
